- 3- 4 pound roast beef pikes peak, chuck roast, rump roast

Prepare apple cider marinade and allow to cool to room temperature.
Use an injector and inject about half of the marinade into the roast.
Place in a zip top baggie and pour remaining marinade over roast. Seal and place in refrigerator for 2 hours.
Prepare a grill fire to about 350° with hickory wood for smoke flavor.
Remove roast from marinade and place over indirect fire. Cook with the lid closed until internal temperature reaches 150°, about 1 hour.
Remove from grill and wrap in foil. Return to the grill and continue to cook with the lid closed until internal temperature reaches 190°- 200°.
Allow roast to rest for about 15 minutes before slicing.
Store leftovers wrapped in plastic wrap or foil in the refrigerator for up to 4 days.
To reheat, add a couple of tablespoons of beef broth or water to a skillet with sliced roast beef and cook over medium heat, stirring often until heated through.
