Prepare a grill fire to about 350° with pecan or oak for smoke flavor.
Pat fish filets dry and place on a baking sheet.
Make the garlic butter by melting butter with grated garlic clove, cook for 3 minutes and remove from heat. Stir in parsley.
Cook fish over indirect fire and brush with garlic butter. Close the lid and cook for 10 minutes.
Check internal temperature with a digital thermometer, cooking until it reaches 145°. Fish will be flaky.
While the grill is getting hot, make the zucchini noodles.
Place a skillet over medium heat, add olive oil, minced garlic, onions and peppers. Cook 3 minutes.
Add in red wine vinegar, white wine vinegar, lemon juice and spices.
Cook for 3 minutes, stirring often.
Add in zucchini noodles and cook for about 5 minutes or until noodles are tender.
Keep warm until fish is ready.
Serve fish over zucchini noodles.
