- 3 racks baby back ribs
- ¼ cup olive oil
- 1 cup Best Dry Rub
Set ribs out about an hour before grilling to come to room temperature.
Remove packaging and dry ribs on all sides with paper towels and place on a baking sheet.
Drizzle with olive oil and rub all over both sides.
Sprinkle about 1/3 cup of dry rub over each rack of ribs, pressing into the meat.
Prepare a grill fire or smoker to about 300° with hickory wood for smoke flavor.
Cook ribs over indirect heat for 1 1/2 hours or until internal temperature reaches 190-200° with a digital meat thermometer.
Remove to a baking pan and tent with foil. Rest for about 15 minutes before slicing.
Store leftover ribs wrapped in several layers of plastic wrap and a layer of foil.
Reheat in a 325° oven, covered with foil, for about 12- 15 minutes.
