Ingredients

  • 1- 2 zucchini
  • ¼ pound sausage
  • ½ small onion
  • 2 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup mozzarella cheese shredded

Instructions

  • Cook sausage in a skillet over medium heat, crumbling as it cooks until well browned.
  • In another skillet, cook onions in olive oil and season with salt and pepper. Cooking over medium heat until onions are softened.
  • Wash zucchini and cut into about 3 inch chunks. Use a spoon to scoop out the inside, leaving a bottom to form a cup.
  • Mix sausage, onions and cheese together and fill zucchini cups.
  • Prepare a grill fire to 300° with hickory, oak or pecan for smoke flavor.
  • Lay zucchini cups on a grill pan and cook over indirect heat for about 30 minutes with the grill closed.
  • Remove from grill and allow to rest 10 minutes before serving.

Notes

Alternately, cut small zucchini in half lengthwise, scooping out the middle to create boats for the sausage stuffing. Cook following the same method as the cups.
