- 7 -10 pound bone-in half ham
- 12 oz pure maple syrup
- 2 tablespoons granulated garlic
- 1 tablespoon coarse ground black pepper
- 1 tablespoon smoked paprika
- 2 teaspoons kosher salt
- 1 teaspoon ground rosemary
Set ham on counter to come to room temperature 30 minutes to 1 hour before cooking.
For the glaze, add maple syrup to a saucepan and whisk in garlic, pepper, smoked paprika, kosher salt and rosemary.
Cook over medium- high heat and bring to a boil. Continue to cook for 3-5 minutes, whisking often.
Remove from heat and allow to cool slightly.
Use an injector to inject maple glaze into the ham. Use remaining glaze to brush glaze all over ham.
Prepare grill to a 300° fire with hickory for smoke flavor.
Place ham over indirect fire, close grill lid and cook for 10- 15 minutes per pound until ham reaches 140° internal temperature.
Remove from grill and allow to cool 10 minutes before slicing.
How to Store and Reheat Ham:
Store ham in a zip top bag, covered in plastic wrap or foil. Refrigerate up to 4 days. Freeze ham in a vacuum seal bag or 2 layers of plastic wrap and a layer of foil up to 3 months.
Reheat slices of ham in a skillet with a tablespoon or two of water over medium heat, turning once to heat through on both sides. Ham slices can also be reheated in a 325° oven on a sheet pan for about 8 minutes.
