Ingredients
4chicken thighs
1onion sliced thin
1zucchini sliced thin
2sweet bell pepperssliced thin
¼cupolive oil
4tablespoonsbrown sugar
2tablespoonsgranulated garlic
1tablespoonsmoked paprika
1tablespoonkosher salt
1tablespoonblack pepper
Instructions
Prepare a grill fire to 300° with hickory or oak for smoke flavor.
Pat chicken breasts dry with paper towels.
Mix brown sugar with garlic, smoked paprika, salt and pepper.
Drizzle chicken with 2 tablespoons olive oil and sprinkle with 2 tablespoons brown sugar rub.
Mix sliced vegetables with 2 tablespoons olive oil and 2 tablespoons of brown sugar rub and toss to coat.
Spread vegetables over a grill pan.
Place grill pan over indirect heat.
Cook chicken over direct fire for 5 minutes to sear. Move to indirect heat and cook with the lid closed.
Stir vegetables every 10 minutes. Continue to cook with the lid closed until chicken reaches 165° internal temperature, about 25- 30 minutes.
Remove chicken and vegetables from grill and allow to rest 10 minutes before serving.
Notes
Store remainder of brown sugar rub in an airtight container.
