Doritos Chicken Casserole

Doritos Chicken Casserole is an easy dinner to make on the pellet grill. Cheesy Mexican chicken with a crunchy corn chip crust is a guaranteed hit for any night of the week.

Ingredients

  • 2-3 cups shredded cooked chicken
  • 8 ounces softened cream cheese
  • ½ cup heavy whipping cream
  • 5 ounce can diced green chiles
  • 1 tablespoon granulated garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 4 cups shredded cheddar cheese
  • 4 cups crushed Nacho Cheese Doritos
  • 2 green onions sliced for garnish
  • Fresh Cilantro for garnish
  • Salsa for topping
  • Sour Cream for topping

Instructions

  • Preheat a pellet grill to 350°.
  • Shred the chicken or chop coarsely.
  • Add softened cream cheese, heavy whipping cream, green chiles, garlic, ground cumin, salt and pepper to a mixing bowl.
  • Beat with an electric mixer until well combined or stir with a wooden spoon.
  • Stir in shredded chicken and mix well.
  • Crush Doritos and cover the bottom of a 2.5 quart casserole dish (about 2 cups).
  • Sprinkle half of shredded cheese over the crushed Doritos chips.
  • Spread the chicken mixture over the cheese in an even layer.
  • Top with the remaining shredded cheese.
  • Crush another 2 cups Doritos and sprinkle over the casserole.
  • Cook for 40-45 minutes or until filling is hot and starts to bubble.
  • Remove from grill.
  • Garnish with sliced green onions and cilantro if desired.
  • Serve with sour cream and salsa if desired.

Notes

  • Cream Soup: Cream soups are a great addition to the filling, use a can of cream of chicken soup, cream of mushroom soup or cream of jalapeno soup in place of the heavy whipping cream.
  • Tomatoes: Stir in a can of RoTel tomatoes with the chicken mixture if desired.
  • Cool Ranch Doritos: Substitute Cool Ranch Doritos or any flavor of Doritos if preferred.
  • Turkey: Leftover smoked turkey is also great in this casserole, either white meat or dark meat or a combination.
  • Oven Method: Bake Doritos chicken in a 350° oven for 40-45 minutes. Top with aluminum foil if it starts to get too brown.
  • Feed a Crowd: Double the recipe and bake in a large casserole dish to feed a crowd.
  • Storage: Store leftover dorito casserole in an airtight container in the refrigerator up to 3 days.
  • Reheat: Casserole can be reheated in the oven in a casserole dish for 12-15 minutes or in a non-stick skillet over medium heat, stirring until heated through.
