Cowboy Casserole

Cowboy Casserole is a great weeknight meal to make on the grill. One of our favorites to use leftover smoked brisket with rotel tomatoes, green chiles, beans and topped with cheesy tater tots.

Ingredients

  • 1 pound smoked brisket chopped
  • 10 ounce can Rotel Tomatoes with green chiles
  • 4 ounce can green chiles
  • ½ cup sour cream plus more for serving
  • ¼ cup taco seasoning
  • 2 cups shredded cheddar cheese divided
  • 28 ounce frozen tater tots
  • 1 tablespoon olive oil
  • 1 tablespoon chopped cilantro optional garnish
  • ½ cup diced tomatoes optional garnish

Instructions

  • Prepare a grill fire to 350°. We are using a pellet grill with hickory pellets.
  • In a bowl, combine Rotel tomatoes, green chiles, sour cream and taco seasoning.
  • Pour into a cast iron skillet.
  • Top with beans, brisket and cheese. Add a layer of tater tots and brush with olive oil.
  • Place the skillet on a hot grill. Cook with the grill closed for 45 minutes.
  • Sprinkle tater tots with cheese and continue to cook until the cheese is melted.
  • Remove from grill and garnish with diced tomatoes and cilantro if desired.
  • Serve immediately with sour cream if desired.

Notes

  • Storage: Store leftover casserole in an airtight container in the refrigerator up to 3 days.
  • Reheat: Place casserole in an oven safe dish and cover with aluminum foil. Cook at 350° 12- 15 minutes or until heated through.
  • Variations:
  • Meat: Tater tot casserole is often made with seasoned ground beef. Substitute ground venison or leftover roast beef.
  • Beans and Vegetables: Use any kind of beans that you have on hand. Pinto beans, kidney beans or black beans are all great options. Add frozen corn or any mixed vegetables will work.
  • Cheese: Pepper jack, Monterey jack or Colby Jack are favorites.
