- 1 pound ground venison
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 large onion diced
- 1 cup diced bell peppers
- 2 large eggs
- 1 tablespoon granulated garlic
- 1 tablespoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- ½ cup peach bbq sauce
Prepare a grill fire to 300°.
Add olive oil, peppers and onions to a skillet and place over medium-high heat. Cook, stirring occasionally until vegetables are softened.
Add ground venison and ground beef to a large bowl.
Add the sautéed vegetables and seasonings.
Mix just until combined with a wooden spoon or with your hands.
Form into a loaf and place on a grill pan.
Cook over indirect fire with the grill closed for 1 hour.
Brush with BBQ sauce and continue to cook with the grill closed another 15- 30 minutes.
Use a digital thermometer and cook until meatloaf reaches 165°.
Remove to a serving platter and rest 15 minutes before slicing.
Store leftover meatloaf wrapped in plastic wrap or aluminum foil in the refrigerator up to 3 days.
Reheat in a skillet lightly coated with olive oil over medium heat. Cook for 2 minutes per side.
