Grilled Vegetable Kabobs

These Grilled Vegetable Kabobs are simple to make and so delicious with Italian dressing. Great to throw on the grill for an easy side dish.

Ingredients

  • 4 ounces mushrooms baby bellas or white button
  • ½ large bell pepper
  • ½ red onion
  • 2 cups small broccoli spears
  • ½ cup cherry tomatoes
  • ½ cup Italian Salad Dressing

Instructions

  • Preheat the grill to 350°.
  • Prep the vegetables by cutting into bite similar sized pieces that will easily go onto the skewers.
  • Thread onto skewers. If you are using bamboo skewers, soak in water for about 10 - 15 minutes or use metal skewers.
  • Brush with Italian dressing on all sides.
  • Place vegetable kabobs over indirect fire and cook with the grill closed about 10 minutes.
  • Brush with more Italian dressing and turn the kabobs. Continue cooking until vegetables are tender, about another 5- 10 minutes.
  • Remove from grill and serve immediately.

Notes

Storage: Remove from skewers and store in an airtight baggie or container in the refrigerator up to 3 days.
Reheat: Place in a pan or skillet with a tablespoon or two of water and cover. Cook over medium heat for 3- 4 minutes until heated through.
