- 3 zucchini - small to medium size
- ¼ cup olive oil
- 1 ½ tablespoons ranch dressing mix
- 1 teaspoon fresh ground pepper
- 1 tablespoon chopped cilantro
Preheat pellet grill to 300° or oven to 350°.
Wash and dry the zucchini.
Cut in half and lengthwise and then again crosswise. Slice each piece into wedges.
Place onto a rimmed baking sheet.
Drizzle with olive oil and sprinkle with ranch dressing mix and fresh ground pepper.
Toss to coat evenly. Spread into a single layer.
Cook on a pellet grill or oven for 15- 20 minutes or until desired doneness is reached.
Remove from grill and garnish with chopped cilantro.
Store zucchini in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet lightly coated with olive oil over medium heat, stirring occasionally until heated through.
