Ranch Zucchini

Ranch Zucchini is a quick and easy side dish to make on the pellet grill with fresh zucchini. A delicious addition to any meal.

Ingredients

  • 3 zucchini - small to medium size
  • ¼ cup olive oil
  • 1 ½ tablespoons ranch dressing mix
  • 1 teaspoon fresh ground pepper
  • 1 tablespoon chopped cilantro

Instructions

  • Preheat pellet grill to 300° or oven to 350°.
  • Wash and dry the zucchini.
  • Cut in half and lengthwise and then again crosswise. Slice each piece into wedges.
  • Place onto a rimmed baking sheet.
  • Drizzle with olive oil and sprinkle with ranch dressing mix and fresh ground pepper.
  • Toss to coat evenly. Spread into a single layer.
  • Cook on a pellet grill or oven for 15- 20 minutes or until desired doneness is reached.
  • Remove from grill and garnish with chopped cilantro.

Notes

Store zucchini in an airtight container in the refrigerator up to 4 days.
Reheat in a skillet lightly coated with olive oil over medium heat, stirring occasionally until heated through.
