Prepare a grill fire to 350° using hickory for smoke flavor.
Pat pork chops dry with paper towels. Place on a rimmed baking sheet and lightly coat both sides with olive oil and season with salt and pepper.
Cook over indirect grill fire with the grill closed about 5 minutes.
Brush barbecue sauce over the pork chops . Flip the pork chops and brush with sauce.. Close the grill and continue to cook another 5-8 minutes or until the pork chops reach 145° using a digital meat thermometer.
Remove from the grill onto a serving platter.
Rest 5 minutes before serving. Serve with additional sauce if desired.
Notes
Store grilled pork chops wrapped in plastic wrap or foil and refrigerate up to 4 days.
Reheat sliced pork chops with a few tablespoons of barbecue sauce. Stir occasionally until heated through.
