Place chicken thighs in a zip top bag with 1/2 cup jerk sauce. Remove the excess air and seal the bag. Refrigerate for 2 hours or longer, up to 8 hours.
When you are ready to cook, prepare a grill fire to 300° using pimento wood or hickory for smoke flavor.
Remove chicken from marinade, discarding the marinade. Place on a rimmed sheet pan, folding the sides of the chicken under the skin as pictured.
Place chicken over a hot grill and cook with the grill closed for about 10 minutes.
Brush with jerk sauce , flip and brush the other side with sauce. Continue to cook another10 - 15 minutes, until chicken reaches 165° using a digital meat thermometer.
Remove chicken from the grill and rest 5 minutes before serving.
Serve with additional sauce if desired.
Store leftover jerk chicken in an airtight container in the refrigerator up to 3 days.
To reheat, slice chicken and place in a skillet with additional sauce. Cook over medium heat, stirring until heated through.
