Prepare a grill fire or smoker to 300° using hickory, oak or pecan. We are using our off set smoker for 4 racks of ribs.
Place ribs on the grill and close the lid. Keep the temperature between 250 and 300°
Continue to smoke the ribs for about an hour or until desired smoke level is reached.
Remove ribs to a clean sheet pan.
Brush ribs with sauce and wrap in heavy duty foil, making a sealed packet. We do this with 2 large sheets of foil, folding the seams together.
Return to the grill keeping the temperature around 275° for another hour or until internal temperature reaches 205°.
Remove from grill and rest for 15 minutes.
Slice ribs in between the bones and serve with additional sauce if desired.
Store sliced ribs in a zip top bag. For a whole rack of smoked ribs, wrap in 2 layers of plastic wrap and a layer of foil. Refrigerate ribs up to 3 days or freeze up to 3 months.
To reheat ribs, place on a rimmed baking sheet and cover with foil. Bake at 350° for 8 - 10 minutes or until heated through.
