Grilled Chicken Sandwiches

Grilled chicken sandwiches are tender, juicy and full of amazing flavor. Italian marinated chicken is grilled and served up on toasted buns with melted mozzarella.

Ingredients

  • 1 ½ pounds chicken breasts
  • ½ cup Italian salad dressing
  • 8 sandwich buns
  • 2 cups shredded mozzarella cheese
  • ½ cup pesto
  • mayonnaise for serving

Instructions

  • Slice chicken into 1/2 inch strips. Place into a zip top bag and pour Italian dressing over the top. Press the excess air out of the bag and zip to seal. Turn the bag over several times until chicken is well covered in marinade.
  • Refrigerate 1 hour or up to 4 hours.
  • Prepare a grill fire to 300° using hickory or pecan for smoke flavor.
  • Cook chicken with the grill closed about 5 minutes.
  • Turn the chicken and continue to cook until chicken reaches 165°.
  • Remove from grill.
  • Place bottom of sandwich buns on a parchment lined baking sheet. Top with chicken.
  • Sprinkle with shredded mozzarella cheese.
  • Return to the grill or place under oven. broiler until cheese is melted.
  • Remove from grill.
  • Add the top buns with pesto and mayo if desired.

Notes

Store leftover sandwiches wrapped tight in plastic wrap in the refrigerator up to 2 days.
To reheat, place sandwiches on a lined baking sheet, remove the top bun and bake the sandwiches at 350° for 8- 10 minutes or until heated through.
