- 2 racks baby back ribs
- 3 tablespoons olive oil
- 1 cup Pork Rub
Place ribs on a rimmed sheet pan and pat dry using paper towels.
Brush the meaty side of the ribs with olive oil and sprinkle with pork rub.
Allow ribs to rest while you prepare the grill to 250° using hickory or pecan for smoke flavor.
Place the ribs, meaty side up over indirect fire. Cook with the grill closed for about 1 hour 15 minutes. Check the ribs with a digital meat thermometer and continue to cook until ribs reach between 190° to 205°.
Remove to a clean sheet pan and allow to rest about 15 minutes. Move to a cutting board and slice to serve.
Store ribs wrapped in 2 layers of plastic wrap in the refrigerator for up to 4 days. Add an additional layer of foil or use a vacuum seal bag to store in the freezer up to 3 months.
Reheat sliced ribs in a covered skillet with a tablespoon of water over medium heat. Turn after about 3 minutes and continue to cook until heated through.
