Grilled Loaded Baked Potatoes
Grilled Loaded Baked Potatoes are a tasty side dish for any meal on the grill. Easier than traditional twice baked potatoes with all of the same great flavors.

- 4 large russet potatoes
- ½ cup softened butter
- 1 large garlic clove grated or minced
- ½ cup grated cheddar cheese
- ½ cup grated smoked gouda
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 slices cooked and crumbled bacon
- Fresh parsley for garnish optional
- sour cream for serving
Scrub potatoes really well and dry thoroughly.
Cut potatoes in half lengthwise and use a spoon to scoop out a bit of the centers for the filling. About 1/2 inch of the center of the potato.
In a bowl combine butter with cheese, garlic, salt and pepper.
Mix in the bacon.
Spoon filling into the indentions of each potato half.
Press potatoes back together.
Wrap each potato in foil, creating a sealed packet.
Cook at about 400° grill temperature over indirect heat for about an hour or until a fork can be inserted into potato easily or test with a digital thermometer cooking to 210°.
Remove potatoes from grill and carefully remove the foil.
Spread filling into each half and top with parsley and serve with sour cream.
Store leftover potatoes wrapped in foil or plastic wrap in the refrigerator up to 3 days.
Reheat wrapped in foil in a 375° oven for about 15 minutes or an air fryer at 350° for about 8 minutes.
