Cut steak into 1 1/2 inch pieces.
Slice cheese into 1 1/2 inch slices, making the same amount as you have pieces of steak.
Drizzle steak with olive oil.
In a small bowl combine, brown sugar, basil, oregano, thyme, paprika, pepper, salt, mustard and red pepper.
Sprinkle over steak and toss to coat evenly.
Prepare a grill fire to about 300° with hickory for wood smoke.
Cook steak over indirect fire with the grill closed for about 5 minutes, test with a digital thermometer and cook until steak bites reach about 128°.
Pull the steak bites off the grill onto a sheet pan. Thread cheese onto toothpicks and then a piece of steak.
Return to the grill, steak side down and cook another 5 - 8 minutes or until steak reaches desired doneness.
Remove from grill and serve immediately or at room temperature.
