Coca-Cola Ribs

- 3 racks baby back ribs
- 2 cans Coca-Cola 24 ounces
- ⅓ cup brown sugar
- 2 tablespoons granulated garlic
- 2 teaspoons dried thyme
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 2 tablespoons cornstarch
Add Coca-Cola to a saucepan and whisk in brown sugar, garlic, thyme, salt, pepper and cornstarch.
Bring mixture to a boil, stirring constantly until thickened.
Remove from heat and cool completely.
Pat ribs dry and place on a rimmed baking sheet.
Pour half of Coca-Cola Sauce over ribs and marinate 1 hour. Refrigerate if marinating ahead, up to 4 hours. Reserve remaining sauce for grilling.
Prepare a grill fire to about 350° using hickory for smoke flavor.
Place ribs, meat side down on the grill over direct fire for 5 minutes to sear.
Flip ribs and move to indirect heat. Coat with remaining sauce and cook with the grill lid closed until ribs reach 180-190* internal temperature.
Remove ribs from the grill and allow to rest 10 minutes before slicing.
Coca-Cola sauce can be made a day in advance and refrigerated until using.
To store leftover ribs, wrap in 2 layers of plastic wrap and a layer of foil. Remove plastic wrap and wrap in foil to reheat. Cook in a 235° oven for 25 minutes or until ribs reach 145°.
