Red Onion Slaw

Red Onion Slaw is a quick and easy side dish for any meal. Fresh cabbage and carrot coleslaw with crisp red onions in a creamy dressing.

Ingredients

  • ½ red onion cut into thick slices
  • 6 cups shredded cabbage
  • ½ large carrot shredded
  • ¾ cup mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons granulated sugar
  • 1 ½ tablespoons apple cider vinegar
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons fresh ground pepper

Instructions

  • Slice red onion and place in a bowl with a few ice cubes and cover with cold water. Set aside for about 5 minutes.
  • You can add a bit of sugar if you would like your onions to be really sweet.Shred or coarsely chop cabbage and carrots. A food processor makes it super quick or use the largest side of your box grater.
  • In a large bowl, add mayonnaise, sour cream, apple cider vinegar, sugar, salt and pepper. Whisk dressing together until smooth.
  • Drain the onions and dry with paper towels.
  • Dice the onion.
  • Add cabbage, carrots and onion to the dressing and mix well.
  • Slaw can be served immediately or covered and refrigerated until ready to serve.

Notes

Store red onion slaw in an airtight container in the refrigerator up to 3 days. Stir before serving.
Save time by picking up a bag of pre-shredded cabbage and carrots slaw mix.
Additional Add-Ins: Diced apples or celery will add a great crunch and texture to the slaw. Add in diced jalapeños for spicy slaw.
