- ½ red onion cut into thick slices
- 6 cups shredded cabbage
- ½ large carrot shredded
- ¾ cup mayonnaise
- 2 tablespoons sour cream
- 3 tablespoons granulated sugar
- 1 ½ tablespoons apple cider vinegar
- 1 ½ teaspoons kosher salt
- 1 ½ teaspoons fresh ground pepper
Slice red onion and place in a bowl with a few ice cubes and cover with cold water. Set aside for about 5 minutes.
You can add a bit of sugar if you would like your onions to be really sweet.Shred or coarsely chop cabbage and carrots. A food processor makes it super quick or use the largest side of your box grater.
In a large bowl, add mayonnaise, sour cream, apple cider vinegar, sugar, salt and pepper. Whisk dressing together until smooth.
Drain the onions and dry with paper towels.
Dice the onion.
Add cabbage, carrots and onion to the dressing and mix well.
Slaw can be served immediately or covered and refrigerated until ready to serve.
Store red onion slaw in an airtight container in the refrigerator up to 3 days. Stir before serving.
Save time by picking up a bag of pre-shredded cabbage and carrots slaw mix.
Additional Add-Ins: Diced apples or celery will add a great crunch and texture to the slaw. Add in diced jalapeños for spicy slaw.
