GUINNESS BEEF STEW

For the Meat: sirloin roast olive oil brown sugar garlic powder minced rosemary kosher salt black pepper smoked paprika dry mustard ground red pepper

IFor the Stew: – bacon – potatoes – onions – celery – carrots – beef broth – Guinness Stout –Worcestershire sauce

Slice the Sirloin into chunks

Mix the Spices

Toss with olive oil add spices

Mix Well

Cook Bacon until Crispy

Cook Onions Carrots &  Celery in Bacon Drippings

Pour in 1 bottle Guinness Stout

Add Beef Broth & Worcestershire Sauce

Mix in Potatoes & Bacon

Place a wire rack over pan & top with sirloin

Place stew on Grill - Cook with lid closed 30 minutes

Cook until internal temperature of sirloin reaches 145- 155°

Carefully add smoked sirloin to stew

Cook until  potatoes are tender

Serve with Irish Soda Bread
