Grilled Sweet Potato Casserole

Scrub sweet potatoes & pierce with a fork. Grill over indirect fire. Sweet potatoes will cook right alongside your main dish. Cook for 1 to 1 1/2 hours.

When sweet potatoes are tender, remove from grill. 

Peel and dice the sweet potatoes. Place in an oven safe dish or cast iron skillet.

Add brown sugar, melted butter, smoked paprika and kosher salt.

Mash to desired consistency. Top with chopped pecans and cooked bacon crumbles.

Return to grill or oven for 30 minutes or until heated through.
