Christmas Prime Rib Roast

Season roast with olive oil, flake sea salt & coarse pepper.

Sear each side of the roast over a hot grill fire.

Lower grill fire cooking 10 -15  minutes per pound.

Cooking Temperature for Prime Rib Roast:  – Rare: 120 -125° – Medium Rare 130 – 135° – Well Done 140 – 145° Rest roast 15 minutes before slicing.

Slice thin and serve with horseradish.
