Steak and Cheese Bites

Often times the appetizers are my favorite part of a meal and we love to host family get togethers where everyone brings their favorite snack. It’s a low-stress way to feed everyone and always delicious. Of course grilled appetizers are our absolute favorites!

Ingredients for Steak and Cheese Bites:

  • Steak (sirloin, strip steak or tenderloin)
  • Olive Oil
  • Brown Sugar
  • Granulated Garlic
  • Dried Basil
  • Dried Oregano
  • Smoked Paprika
  • Black Pepper
  • Kosher Salt
  • Dry Mustard
  • Ground Red Pepper
  • Jarlsberg Cheese

How to Grill Steak and Cheese Bites:

  • Prepare a grill fire to about 300° using hickory or oak wood for smoke flavor.

  • Cut steak into 1 1/2 inch pieces. 
  • Drizzle with olive oil.
  • In a bowl mix the spices together and sprinkle over the steak and mix to coat well.

  • Slice cheese into 1 1/2 inch pieces and set aside. Cut the same number of slice as you have steak bites.

  • Grill steak bites with the grill lid closed about 6 to 8 minutes. 
  • Test with a digital thermometer and remove from grill when steak bites reach about 125°- 130°.

  • Skewer a slice of cheese onto each toothpick with a steak bite.

  • Return to the grill for about 5 minutes until steak reaches 135° for rare and cheese just starts to melt.

  • Remove from grill to a platter and serve immediately. 

INTERNAL TEMPERATURES FOR STEAK BITES:

  • Rare:  130°
  • Medium Rare: 140°
  • Medium: 155°
  • Well Done: 165°

Best Steak to Use for Appetizers:

Use whatever cut of steak that you have on hand. These bites are going to cook quickly and should be tender and delicious. Sirloin is a budget friendly option. Strip steak or tenderloin are also great options if available. 

What is Jarlsberg Cheese?

Jarlsberg cheese is a Norwegian Cheese similar to Swiss cheese. It has a mild and nutty taste that pairs really well with the steak. 

Generally it can be found in the deli section of most grocery stores.  If you can’t find Jarlsberg, Swiss cheese will work.

Steak bites are delicious served hot off of the grill or at room temperature. They make a great addition to any appetizer platter and are likely to be the first thing to disappear. 

We used the trimmings from the whole beef tenderloin roast that we purchased for Christmas. Use any steak that you have on hand. We’ve made steak bites with sirloin and strip steak, you can’t go wrong here.

Steak and cheese bites are a fancy appetizer to add to any celebration or holiday dinner plan. It just takes about a pound of steak to make these appetizers and they are very filling and delicious.

Ingredients

  • 1 pound steak tenderloin, strip steak or sirloin
  • 2 ounces Jarlsberg cheese or Swiss cheese
  • 1 tablespoon olive oil
  • ½ tablespoon brown sugar
  • 1 teaspoon granulated garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon dry mustard
  • pinch ground red pepper

Instructions

  • Cut steak into 1 1/2 inch pieces.
  • Slice cheese into 1 1/2 inch slices, making the same amount as you have pieces of steak.
  • Drizzle steak with olive oil.
  • In a small bowl combine, brown sugar, basil, oregano, thyme, paprika, pepper, salt, mustard and red pepper.
  • Sprinkle over steak and toss to coat evenly.
  • Prepare a grill fire to about 300° with hickory for wood smoke.
  • Cook steak over indirect fire with the grill closed for about 5 minutes, test with a digital thermometer and cook until steak bites reach about 128°.
  • Pull the steak bites off the grill onto a sheet pan. Thread cheese onto toothpicks and then a piece of steak.
  • Return to the grill, steak side down and cook another 5 - 8 minutes or until steak reaches desired doneness.
  • Remove from grill and serve immediately or at room temperature.
