Garlic and Cracked Pepper Steaks

Grilled Steak is our go-to meal for a date night in or special celebration. Add our bbq bacon onion baked potatoesloaded baked potatoes and grilled creamed corn for a complete meal.

Strip steaks are quick to grill for any night of the week. We found a deal and purchased a whole strip loin roast and cut these strip steaks a little thicker than we usually find at the grocery store. You can also ask the butcher to slice steaks to your desired thickness.

Ingredients Needed

  • Strip Steaks ~ New York Strip
  • Duck Fat or Olive Oil~ Duck Fat Steak is one of our favorites but olive oil is a great substitute.
  • Minced Garlic ~ About 1/2 large clove per steak
  • Fresh Cracked Pepper ~ We use tri color peppercorns, coarse restaurant style ground pepper works too
  • Kosher Salt
  • Smoked Paprika ~ Adds just a bit of smokiness to the crust of the steaks. 

We have saved duck fat from making Grilled Duck to make Duck Fat Ribeye Steaks but lately we’ve been using this Duck Fat from Amazon. Both are delicious.

Step By Step Directions

  • Pat steaks dry with paper towels and place on a sheet pan.
  • Brush with melted duck fat or olive oil on both sides.

  • Sprinkle with minced garlic, coarse cracked peppercorns, kosher salt and smoked paprika, rubbing the seasoning down into the steaks.

Prepare a grill fire to 350° using pecan or hickory for smoke flavor.

Sear steaks for 3 minutes with the grill closed.

Turn the steaks and continue to cook for 3- 5 minutes or until steaks reach desired temperature using a digital meat thermometer. We cooked these steaks to about 125°.

  • Remove steaks to a clean sheet pan and allow to rest 10 minutes before serving. Tent with foil to keep warm.

Temperature for Grilled Strip Steak

  • Rare:  130°
  • Medium Rare: 140°
  • Medium: 155°

How to Store and Reheat

If by chance you have leftover steak, store it wrapped in a few layers of plastic wrap in the refrigerator up to 4 days.

To reheat, slice the steak and coat a skillet with olive oil or butter. Place over medium- high heat and add the steak when it is hot. Stir occasionally until heated through.

Wrap leftover steak in a couple of layers of plastic wrap and store in the refrigerator up to 4 days.
Reheat sliced steak in a hot skillet coated with butter or olive oil. Stir occasionally until heated through.
