  • Pour 3/4 cup of strong brewed coffee into a small saucepan. Stir in brown sugar, Worcestershire sauce, Italian seasonings, smoked paprika, garlic and salt.

  • Pour coffee marinade over chuck roast, covering on all sides. Set aside until ready to grill, at least 30 minutes.

  • Prepare your grill to about a 300° fire using hickory wood for smoke flavor.

  • Close the grill lid and cook for 15 minutes.

Chuck roast is flavorful but it is a tough piece of meat. Marinating it will help tenderize.  Grill the roast to your likeness. We like it best cooked to about medium and thin sliced.

How to Store and Reheat Roast Beef:

Grilled roast beef will stay the freshest and best tasting if you slice it as needed. Wrap the roast tightly in several layers of plastic wrap and then a layer of foil. It will keep up to 5 days refrigerated.

Reheat leftover roast beef in a skillet with a few tablespoons of water or broth over medium heat. Sliced roast will reheat quickly.

Ingredients

  • ¾ cup strong brewed coffee
  • 1 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Italian seasonings
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 3 pound chuck roast

Instructions

  • Make the marinade by combining brewed coffee, brown sugar, Worcestershire sauce, Italian seasonings, smoked paprika, garlic and salt in a saucepan.
  • Cook over medium- high heat, whisking together until mixture comes to a boil. Remove from heat and cool slightly.
  • Pat chuck roast dry with paper towels and place in a shallow dish or zip top bag. Pour marinade over meat, coating all sides.
  • Allow meat to marinate at least 30 minutes before grilling.
  • Prepare grill fire to 300° with hickory wood for smoke flavor.
  • Place marinated roast over an indirect fire and baste with marinade.
  • Cook with the lid closed for 15 minutes. Baste roast once more with marinade and then discard any remaining marinade.
  • Continue to cook with the lid closed, 30-45 minutes or until roast has reached desired doneness. 145° will be medium.
  • Remove from grill and allow to rest 15 minutes before slicing.

Notes

Marinade can be made up to 2 days in advance and stored in an airtight container in the refrigerator.

  1. I wanted to have a chuck roast done in a different way. This recipe was extra special. The marinade was over the top heavenly. My husband commented how wonderful the aroma from the marinade was, which I made the night before. He was so pleased with the flavor of the roast.   2. I used 2/3 cup of brown sugar and it turned out to be plenty sweet. Next time I plan to add hot pepper flake. Seems to need a little heat. Absolutely delicious marinade.

  3. Excellent! I marinated all day then cooked my roast in the instant pot with the marinade. It was so flavorful and amazingly tender. Made great gravy too! Maybe I would use less brown sugar next time. Thank you!
